Tomato Soup

This tomato soup recipe is a go-to favorite in our household during cold weather. It's incredibly easy to prepare, using mostly pantry staples that I always have on hand. More importantly, it's  comforting. The tomatoes provide a tangy taste, balsamic vinegar adds a touch of sweetness You can enjoy it on its own with a drizzle of olive oil, a sprinkle of black pepper, and some fresh basil leaves on top... or you can pair it with a grilled cheese sandwich. If you're in the mood for cozy comfort food like I have been lately, I highly recommend the latter.

This one is concoction inspired by the recipes I learnt about from friends and the internet.

You will need:

5-6 fresh tomatoes

2 onions

Olive oil

10 garlic pods 

Herbs like basil or thyme leaves etc for flavouring

Balsamic vinegar and heavy cream

Salt to taste

Method:

Boil, peel,puree and strain the tomatoes and keep aside.

Chop the onions and shallow fry them till golden brown. Add the garlic pods  and fry for half a minute.

Add the pureed tomatoes and toss a little.

Blend the whole in a liquidiser and pour into a saucepan.

Add about 250 ml of water and bring to a boil.

Add a dash of balsamic vinegar and a dollop of heavy cream. Sprinkle chopped herbs of your choice or croutons and serve the soup hot.

Enjoy the soup with a freshly tossed green salad and sourdough.
