Sindhi Kadhi

Method
Take 2 tbsp of oil in a pan
When oil is hot, add 1/4 tsp of mustard seeds and cumin seeds each, a pinch of fenugreek seeds, one inch finely chopped ginger,and 2 chopped green chillies!
When all of the above start sputtering, add 2 tbsps of besan( gram flour )
Sauté it in very LOW FLAME! You cannot do this step on high flame!
When the gram flour changes colour to a lovely golden brown, which should take about 20 minutes, add 2 glasses of water and 2 big chopped tomatoes!
When everything becomes mushy add the vegetables which have been lightly sautéed separately. Lady fingers, potatoes, cluster beans, carrots and drumstick!
Add salt!
Soak tamarind and add after vegetables are cooked!
Add lots of chopped coriander leaves!
Have this with basmati rice and potato tuk! Which means chunks of potatoes deep fried!

Oil = besan in quantity!!
