Alphonso mango ice cream
Ice cream with Alphonso mangoes
This is a summer favourite. As a child I have spent many summers in Pune where my grandparents stayed and to me summer is never complete without the Alphonso mangoes that come from coastal Maharashtra. Sharing a cherished recipe of an ice cream crafted by my mother—born from her intuition, trials and a dash of culinary creativity.
Make sure you use the best quality alphonso mangoes only!
You will need:
1 litre of whole milk
200 gms of fresh cream
Pulp of 3-4 large Alphonso mangoes
Sugar to taste
Preparation
Mix the milk, the cream and the freshly taken out mango pulp and sugar. Make sure you add enough sugar as the sweetness tends to lessen after the ice cream freezes

Pour it into a container which goes into the freezer compartment of your refrigerator

Once completely frozen remove and pass it through the blender and put it back into the freezer to freeze again

The ice cream is ready

Garnish with some chopped mango and enjoy it
