Fenugreek sprouts salad

Serves 2 or 3

You will need:

2 tablespoons fenugreek seeds

1 tablespoon oil for tempering

1 chopped chopped green chilli, a pinch of mustard seeds, asafoetida

2 tablespoons grated fresh coconut

2 tablespoons chopped fresh coriander

1 tablespoon lemon juice

Salt to taste

Preparation

  1. Soak the fenugreek seeds overnight. Leave them to sprout in a moist cotton cloth during the day

  2. Heat the oil for tempering . Add the chilli, mustard seeds and asafoetida and wait till the seeds splutter. Switch off the heat.

  3. Gently mix the tempering and the fenugreek sprouts.

  4. Add the coconut and the coriander the lemon juice and mix gently

 

Serve as a salad or a side dish.
